Ingredients

  • 2 Tbsp. Salted Butter
  • 2 Tbsp. Roasted Garlic Oil
  • 2 Tbsp. Minced Garlic
  • Salt & Pepper
  • 2 Cans Ranch Style Beans, Pinto Beans, or Chili Beans
  • ¾ Cup Enchilada Sauce
  • ⅓ Cup Sour Cream
  • 2 Cups Grated Cheddar Jack Cheese
  • diced tomatoes
  • diced onion
  • cilantro
  • sliced avocado
  • grated cheese
  • Frito or Tortilla Chips

Directions

  1. Preheat the broiler
  2. In an ovenproof skillet heat butter over medium heat. Add the onion and garlic. Season with salt and pepper, and cook until softened and translucent, 2 to 3 minutes. Mash the beans with the back od a fork.
  3. Fold in the sour cream and ½ cup of cheddar jack cheese. Mix well and top with the remaining 1 ½ cups cheddar jack cheese.
  4. Broil the dip until the cheese starts to brown and bubbe, 3 to 4 minutes.
  5. Garnish with tomato, onion, cilantro, avocado, cheese, and sour cream.
  6. Serve hot with tortilla or frito chips.
