Ingredients
- 2 Tbsp. Salted Butter
- 2 Tbsp. Roasted Garlic Oil
- 2 Tbsp. Minced Garlic
- Salt & Pepper
- 2 Cans Ranch Style Beans, Pinto Beans, or Chili Beans
- ¾ Cup Enchilada Sauce
- ⅓ Cup Sour Cream
- 2 Cups Grated Cheddar Jack Cheese
- diced tomatoes
- diced onion
- cilantro
- sliced avocado
- grated cheese
- Frito or Tortilla Chips
Directions
- Preheat the broiler
- In an ovenproof skillet heat butter over medium heat. Add the onion and garlic. Season with salt and pepper, and cook until softened and translucent, 2 to 3 minutes. Mash the beans with the back od a fork.
- Fold in the sour cream and ½ cup of cheddar jack cheese. Mix well and top with the remaining 1 ½ cups cheddar jack cheese.
- Broil the dip until the cheese starts to brown and bubbe, 3 to 4 minutes.
- Garnish with tomato, onion, cilantro, avocado, cheese, and sour cream.
- Serve hot with tortilla or frito chips.
